At Broken Strings Brewery, every loaf is hand-shaped, slow-fermented, and baked with the kind of patience that only makes sense when you care about the result. No shortcuts — just flour, water, salt, and time.
Broken Strings Brewery started with a simple frustration: Orlando had plenty of bakeries, but very few that treated bread like it mattered. We wanted something different — bread that took its time, used ingredients you could actually pronounce, and tasted like someone cared.
So we built a small bakery on West Church Street where the only rush is the morning rush. Our sourdough ferments for 72 hours. Our croissants are laminated by hand at 5 AM. Our beers are brewed in the back, and our coffee is always fresh.
Nothing fancy. Just real food, made the right way, served with a smile. That's the Broken Strings promise.
Great bread isn't rushed. Here's what goes into every loaf we bake.
Flour and water rest together for an hour. This develops gluten naturally — no mechanical kneading needed.
Our dough rests for 72 hours in temperature-controlled rooms. Flavor builds slowly, complexity deepens.
Each loaf is hand-shaped, placed in bannetons, and left to proof until it's light and full of air.
Deck oven, steam injected, 450°F. We let each loaf cool completely before slicing — patience is everything.
We're right on West Church Street — easy to find, hard to forget. Stop by for fresh bread, a cold brew, or just a good conversation.
